This one-skillet meal has all the flavours you adore in a stuffed pepper all ready in less than thirty minutes! Make this filling and oh so delicious dish without the hassle in just one pan in a breeze.
Lately, I have been obsessing with one-skillet meals. They are so easy and quick to throw together, not to mention fewer dishes! The school has already begun, and busy days are ahead. It’s time to bring back recipes that we can whip up in minutes. This Ground Beef Stuffed Pepper Skillet has been one of my go-to and favourites for a season like this. It’s a simple dish made with only a few ingredients yet filling and crazy delicious! A certified family-approved meal!
Ingredients
1/2 onion, diced
3 cloves garlic, minced
1 pound ground beef
1/2 c. red bell pepper
1/2 c. green bell pepper
14.5 ounces diced tomatoes
3/4 c. white rice, I use Jasmine
2 c. beef broth
1 tablespoon parsley
2 tablespoons tomato paste
1 teaspoon Italian seasoning
1 1/2 c. cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
How to make Ground Beef Stuffed Pepper Skillet
Step 1: In a skillet, cook the ground beef and onion over medium heat until the meat is completely cooked and browned, breaking the ground beef into pieces. When done, drain and discard any fat.
Step 2: Return the skillet over the heat. Add the bell peppers to the skillet along with the diced tomatoes, rice, beef broth, tomato paste, Italian seasoning, salt, and pepper. Mix well until combined, then bring the mixture to a boil.
Step 3: Decrease the heat to a simmer, then put the lid on and cook for approximately 18 minutes until the rice is completely cooked. Using a fork, fluff the rice, then top with shredded cheese. Replace the lid and allow the cheese to melt over low heat. When done, serve garnished with fresh parsley. Enjoy!
