I am a fan of salad. They are super easy to make and a nice addition to any meal. They are light and very adaptable. If you want another easy, great, and healthy dish to add to your menu list, then you have to give this a try very soon. Pair this with your favourite meal, or enjoy this as-is for a light and quick meal.
This salad is a great option for when you are craving ground beef taco from your fave Mexican restaurant – but without the taco shells! But, unlike the restaurant version, this taco salad is healthy, low carb, and gluten-free!
INGREDIENTS
1 teaspoon Avocado oil (or your preferred oil)
1 pound Ground beef
3/4 c. Cheddar cheese (shredded)
8 ounces Romaine lettuce (chopped)
1 1/3 c. Grape tomatoes (halved)
1 medium Avocado (cubed)
1/3 c. Salsa
1/3 c. Sour cream
2 tablespoons taco seasoning (you can use either store-bought or home-made)
1/2 c. Green onions (chopped)
HOW TO MAKE AN EASY HEALTHY TACO SALAD RECIPE WITH GROUND BEEF
Step 1: In a skillet, heat the oil over high heat. Once the oil is hot, add the ground beef and stir fry for about 7 to 10 minutes, breaking the meat apart using a spatula until the beef is no longer pink and the moisture has evaporated.
Step 2: Into the ground beef, add the taco seasoning. Stir well until incorporated. You can pour in about 1/4 cup of water when adding the seasoning, then simmer for a few minutes.
Step 3: In the meantime, place the rest of the ingredients in a large bowl. Mix well until combined, then add this to the ground beef. Stir well.
Step 4: Remove from the heat when done and serve immediately. Enjoy!
