Ingredients:
1 tbsp olive oil
1 lb ground beef*
1 (1.25-oz) package taco seasoning
1 (10-oz can) Ro*Tel® Mild Diced Tomatoes & Green Chilies
1 tbsp tomato paste
8 oz spaghetti
1/2 c shredded cheddar cheese
1/2 c shredded mozzarella cheese
1 Roma tomato, diced
2 tbsp chopped fresh cilantro leaves
Directions:
Step 1: Place a Dutch oven or a large stockpot on the stove and turn the heat to medium-high.
Step 2: Add olive oil and allow it to become hot.
Step 3: Add the ground beef and cook for about 3 to 5 minutes or until crumbly and brown.
Step 4: Add in the taco seasoning and stir until well combined.
Step 5: Discard any excess grease.
Step 6: Add in the Ro*Tel®, spaghetti, 3 cups of water, and tomato sauce. Allow the mixture to boil.
Step 7: Cover the pot with the lid and reduce the heat to low. Simmer the mixture for 15 minutes or until the pasta is al dente.
Step 8: Remove the pot from the stove and immediately sprinkle the cheeses over it.
Step 9: Cover the pot with the lid again and allow the cheese to melt. This may take about 2 minutes.
Step 10: Spoon onto serving plates. Garnish with cilantro and tomato.
Step 11: Serve and enjoy!
